You will receive far less calories than ice cream loaded with chocolate syrup and a host of vitamins from your treat. Mix 1 cup honey, cup heavy cream, 1 TBSP butter, 1 tsp vanilla and 1/8 tsp salt in a heavy saucepan. Cook the first two ingredients to 238 degrees F, remove from the heat and add the remaining ingredients. Your sauce will thicken and be absolutely luscious.

There are also honey recipes for sweet, healthy snacks that, once made, can be kept for weeks. Rather than chips, candy, or cookies, try granola. Cover it with milk and eat it like cereal. You can add salty nuts to go with the honey sugar flavor, depending on preference.

Mix 2 cups coarsely chopped nuts, 4 cups rolled oats, and 1 cup raisins into a large mixing bowl. Blend together and set aside. In a large saucepan, combine cup melted margarine, cup honey, 1 tsp vanilla, 2 tsp ground cinnamon, and a pinch of salt. After mixing together, bring to a boil, allowing to cool for 1 minute. Remove and pour over oat mixture, stirring until blended. Pour onto a greased cookie sheet, then bake for 20 minutes at 350 degrees, stirring every 5 minutes. After it cools, crumble for a delicious treat.

If you make an effort to replace your granulated sugar with a small amount of honey sugar, it won’t be long before you don’t even notice that absence of refined sugar. Test your regular recipes with honey sugar, taking care to account for the liquid measure. Remember to reduce your liquids by a quarter cup per each cup of honey, and add half a teaspoon baking soda for each cup of honey used in baked goods.

How To Use Dairy Produce: Part 3 – Eggs

The Basic Preparation Of Foods: Dairy Products.

EGGS: Part 1

Eggs can be fresh or dried, the latter being only hens’ eggs without the shell and water. Dried egg should be stored in a cool, dry place – not in the fridge! Store eggs for a few days or a week in a cool place away from strong-smelling foods. An egg stand is ideal for this. If the eggs are dirty, wipe them clean – washing will remove the natural oils which help preserve the eggs.

Pickled Eggs: eggs laid in the Spring keep better than those laid in the other seasons. Eggs that will not clean-up, must be rejected. Waterglass or the special preparations should be used. If an egg floats to the surface, use it immediately. Try to maintain the ambient temperature between 2 and 8 C and they should keep for 6 to 9 months.

Preparing Eggs for Cooking: break each egg separately into a cup, before adding it to the other ingredients to ensure it is not ‘off’. If you wish to separate the white from the yolk, tip the contents back and forth between the two eggshell halves and the white (albumen) will run off. Beat eggs with a whisk or a fork in an appropriate bowl; whip egg whites with a knife on a dinner plate – a pinch of salt will help.

Raw eggs used to be prescribed for invalids as they are easily digestible, but, this not advisable these days due to the prevalence of salmonella. One method, presented here for the curious was to strain a beaten egg into a mug and slowly add a cup of hot milk (or tea, coffee or lemon water; add sugar to taste. Sherry was often added also.

Cooking Eggs: eggs should be cooked very slowly because the albumen cooks at a temperature which is lower than that of boiling water and becomes ‘tough’ at higher temperatures. By the same token, if you use raw egg to thicken a sauce and the liquid is allowed to boil, the sauce will ‘curdle’, i.e. the egg will solidify into small specks, spoiling its texture.

Coddling: produces easily digestible egg-whites, making it an ideal meal for invalids and children. Lower eggs into 3″ (75mm) boiling water; replace lid and turn off the heat. Let stand for: 7 mins for medium-, 5 mins for soft- and 20 mins for hard-boiled.

Boiling: lower fresh eggs gently into 3″ (75mm) boiling water with a large spoon. Replace the lid and boil gently for 3-4″ mins for soft-, 4-5 mins for medium- and 10 mins for hard-boiled eggs.

Place the eggs in eggcups: tap the shell to crack it, pemitting the steam to escape and so preventing further cooking. For sandwiches, salads etc: boil egg for 12 mins and plunge into cold water. This enables the shell to be easily removed and discourages a black ring around the yolk.

How to Make Noodles

Although many people like noodles and they are European and Asia cuisines basic staples, they do not have an idea of how they are made. Using a few steps, one can be able to make noodles. Making and dividing up pasta dough is the first step of making noodles. After the portioning the dough should be relaxed and using semolina or all purpose flour one should dust a flat, big surface to prevent sticking.

Flattening of the dough comes next and this should be especially done to the side that is going into the machine. Semolina or all-purpose floor will again come in handy to dust the machine that will be used in making pasta. The pastas length will increase dramatically after it has gone through rollers success fully. At this time it can be hard to continue making the noodles as it will have become thinner and changed into a lengthy sheet. Perfect Weather Means Bar-B-Que Time

Many people put up their bbq grills and equipment right after the Labor Day holiday and don’t take it out until Easter the following year. If this is you, stop it! You’re missing out on some of the best bbq’ing around.

The cool weather of Fall and Winter offers us backyarders a time to get out and grill up some of our favorite meat. Since the weather is so nice, why not make it a family affair? To me, cooking in the Fall and Winter sure beats standing over a hot grill when it’s 100 degrees outside. In fact, as I write this, it’s 28 degrees outside and I have a Venison roast in the smoker. Talk about good eats!

Any food you grill during the Summer only gets better in the Fall and Winter. It’s also the perfect time to try your hand at grilling Wild Game. Many hunters have some meat in the freezer from Fall hunts plus there are a lot of grocers now carrying Wild Game. Keep in mind that most Wild Game has less fat than beef, chicken or pork so it will need special attention. Mainly, that you should cook it slower and be sure not to overcook it. It should have a warm pink center.

Before you head out and fire up the grill, keep these few tips in mind. Remember, your grill or smoker will take longer to heat up. So start your fire early. This includes you gas grill guys and gals. As a general rule, if you have one of those thin wimpy grills, it will take more wood, charcoal or gas to get it hot and keep it hot. Make sure you plan accordingly.

Cold Winter winds can sap the heat right out of an electric smoker. Make sure you have an insulation blanket handy. You can find these at most places that carry electric smoker or online at retailers like Cabelas. The blanket will keep your smoker warm and will allow your meat to cook evenly. Don’t use anything flamable to insulate your smoker and do not use normal insulation! That should go without saying, but you know someone is likely to try it.

Since your grill will cool down quicker, I like to use a little extra wood or charcoal. This helps the meat cook better and keeps your grill at the right temperature. Also, try and place your grill or smoker out of the wind. Even gas grills can have a problem staying hot if there’s a cold North wind blowing on it.

Another thing to keep in mind is the area around your grill or smoker. During the Summer, the vegetation was lush and green. Now it’s dormant, brown and brittle. Just right to ignite with a spark from your grill or smoker. If you have any doubts, hose downt the immediate area around your cooking area.

If you’re one of the many who have been depriving friends, family and yourself of smoked and grilled foods in the Winter. Now is the time to stop. Go get that grill out and fire that baby up and start cooking some good food. Your Wife called and said it was okay!

Bread Machine Mixes For Bread Making Machines.

Are bread machine mixes any good? Yes, some of them are, but the problem with all bread machine mixes is that they limit your choice and discourage your creative talents. That may sound a little harsh, but think about it for a minute. If you rely on bread machine mixes you can only make the bread for which you can find a bread machine mix and you can only put the bread machine mix in the bowl and switch the bread making machine on. You are not encouraged to alter the bread machine mix for fear that it won’t work.

OK, what is the alternative? Well, the old-fashioned recipe book, of course! Not just any old recipe book, but a special bread making machine recipe book. Bread making is a very easy, but very tiresome process. The ingredients are ubiquitous, everyday, household items: water, flour, yeast, salt, sugar and oil. You most certainly have those items in your kitchen with the possible exception of yeast, which can be bought in any super store for very little money and it keeps for ages.

And I’m sure you already know what happens when you follow a recipe, don’t you? You have already read the recipe through and you know you have everything in the cupboard, but when the recipe calls for, let’s say, sultanas, you open the cupboard door and see that you don’t have any sultanas – they were currants! Oh, well you think, they’ll do. You make do. You experiment. You are developing your talents and creativity. Bread making mixes cannot and will not do that for you.

A good bread making machine recipe book will have something over 100 recipes coming from a number of different countries and you will become really enthusiastic about experimenting with the various ones. The point is that you may not find recipes for all these breads in one recipe book, but if you have a reference point, like a bread recipe cookbook, you can |begin|start off by using previously tried and tested gourmet bread recipes and gradually develop your own – oftentimes because you have to.

I once made a really great loaf of bread by adding some of the leftover vegetables from my Sunday dinner. It was very delicious, however I could never quite make the same loaf again, try as I did many times, because I had not written down the weights of the added vegetables. I could only remember that I had added green beans, potatoes and sweet corn in it!

Bread machine mixes will never in a million years give you that, will they? And bread machine mixes are relatively expensive compared to the cost of 10 pounds. I usually vary the ingredients too: honey instead of sugar, milk instead of water, olive oil or butter instead of just corn oil. Rock salt instead of sea salt or visa versa. I’m sure you see what I mean.

Bread machine mixes are limited and limiting. A bread making machine is a great way to use up leftovers. I have even added meat and fruit in my gourmet bread. My principle is: if it’ll go in a sandwich it’ll go in the dough – like an Indian stuffed paratha or stuffed naan bread.

Stop buying bread machine mixes – they are a waste of money. Instead be creative with a bread machine recipes cookbook.

French Press Coffee Pot

Did you know that your coffee maker could be filtering out the flavor? The filtered brewing process of most popular coffee makers on the market today removes the most important part of the coffee, the oil. Coffee oil is where most of the coffee’s flavor comes from and its lost when the coffee passes through a filter. To make a more aromatic and memorable cup of coffee you should try using a French press coffee maker.

A French press (sometimes called a coffee press) is usually a glass cylinder with a plunger like device inside. You place your coffee grinds inside and pour hot water into it. The water should not be boiling or you will scald your grinds, which will affect the taste. 200 degree water is the optimum temperature for a fine cup of coffee. If youre using a kettle to heat your water, remove it from the heat before if starts whistling. Either that or you can let the water boil but let it sit for a few minutes before pouring it into your coffee press. Remember to leave at least an inch of space when filling up the French press.

The coffee press works best with a grind that’s a little bigger than usual. If you’re grinding your own beans try to make them a little larger than what you’d buy for your automatic drip coffee maker. And you definitely don’t want to grind the beans down to dust. If the grinds are too fine, they will clog the coffee press.

Let the coffee steep in the water for about 4 minutes. Now its time for the press part of the French press. Place the French press on a no slip surface and slowly and smoothly press the plunger down. Press too hard or too quickly and in a worst case scenario, you could have boiling hot water shoot out all over you. This step is how the coffee grinds are forced to the bottom of the container and youre left with delicious fresh brewed coffee in the top chamber. You are now ready to pour and serve.

The coffee press is an old way to make coffee but manufacturers have modernized the equipment. There’s conversation starting glass and stainless steel French presses and they even make travel mug editions. So now your insulated travel mug will not only keep your coffee warm but it’ll brew it as well.

With coffee becoming such an important part of most peoples days, isn’t it time that we pampered ourselves with a better tasting brew. The French press is an easy and flavorful way to make a cup of coffee. Pasta – You choose the sauce, Alfredo is my favorite

*Veggie eater – a rich sauce smothering a bed of your favorite noodles top with cheese

*Meat eater – all of the above but include some chicken with a white sauce or sausage with a red sauce

These are just a few of the ideas you can use when creating one meal for 2 types of eaters. Don’t be afraid to experiment with those family favorite meals, you never know it just might become the next great meals.

What is in a Typical Mexican Meal?

Mexican cuisine is known for its colorful presentation and healthy qualities. Home to the Aztecs, Mayans and Zapotecs, Mexico developed a strong agricultural civilization early. They grew many foods like avocados, peppers, beans, corn, tomatoes, sweet potatoes, and squash. They hunted for deer, turkey, rabbit, and quail. They brought over livestock like sheep, pigs, and chickens, as well as crops like wheat and sugarcane. When Spain stopped ruling Mexico three hundred years later, they had made quite an impact on traditional Mexican cuisine.

The most important ingredient in Mexican cuisine is corn. Cornmeal, also known as masa, is made into dough that forms the base for tamales, empanadas, and tortillas. Corn is also added as an ingredient to stews, soups and more. Flour tortillas are more popular in northern Mexico. Chili peppers are frequently used in Mexican dishes. Jalapenos, Serrano and poblano chilies are some of the more popular choices.

Beans also provide a good source of protein in Mexican meals. Pinto beans are found in the north, while black beans are popular in the Yucatan peninsula. There are many different varieties used throughout Mexico to make dishes like frijoles (refried beans).

There are many regional favorites found in the typical Mexican meal. Beef is used frequently in the north, as it is hot and dry, with good grazing grounds.
