This morning I woke up with a serious craving for Funnel Cake.

When I was a kid we use to go to Knotts Berry Farm and Six Flags Magic Mountain and the highlight was always FUNNEL CAKE.

I don’t think I’ll be visiting any amusement parks any time soon…

I have tried the funnel cake at Jack in the Box but its not the same… so I guess I’ll have to make my own.

Deep Fryer Cinnamon Funnel Cakes Recipe:
vegetable oil
2 cups all purpose flour
2 Tbs. sugar
1 tsp. baking powder
1 tsp. ground cinnamon
1/4 tsp. salt
2 eggs, lightly beaten
1-1/4 cups milk
1 cup powdered sugar
Heat oil in an electric deep fryer to 375°F. Combine next 5 ingredients in a mixing bowl. Combine beaten eggs and 1 cup milk in another bowl. Stir into flour mixture until smooth. If batter is too thick, stir in additional milk. Fry one cake at a time. Holding finger over funnel spout, pour about 1/3 cup of batter into funnel. Hold funnel over preheated oil and release finger. Using a circular pattern, pour batter into fryer. Fry about 1-1/2 minutes until golden. Turn and fry another 1-1/2 minutes. Transfer cake to absorbent paper to drain. Sprinkle with powdered sugar. Repeat process until batter is used. Serve warm. Alternately: Batter may be slowly poured into hot oil from a glass measuring cup.

Back in April 2009 I blogged about two sisters serving life sentences in Mississippi for a crime they did not commit. Thousands of us concerned bloggers and citizens wrote letters to Governor Haley Barbour of Mississippi, signed petitions, alerted the media, and shared this atrocious wrongful conviction case in hopes that justice would be served.

God is good, the Scott Sisters will be released and hopefully pardoned any day now!

Many people believe that the governor suspended their sentences for political reasons. I don’t know or even care why he did it, I am just happy that they will finally be released from prison after so many years of suffering and waiting for justice! I send my Love, prayers, and continued support to Jamie and Gladys Scott.

In more ways than I can begin to type… it has been made clear that it is time for me to step up and take an active role in the decisions being made in my community, district, state, and country. My name will be on the ballot on January 8th to represent the 52nd Assembly District as a Delegate for the California Democratic Party.

My personal motto is to “Be the change you wish to see in the world.” My every day mantra is “Lets Grow!”

Someone close to me says they want the Democratic Party to be more aggressive and stop being “punks” LOL, in many ways I understand that sentiment and that’s one of the reasons I’m stepping up. Rest assured, my mama and daddy didn’t raise not one punk!

I don’t care about titles, being politically correct, or whether or not people like me. (You don’t have to like me but you will respect me). I am not a seasoned, poised, or even an aspiring politician. I’m simply Marenda from Compton, a woman of the people that wants the best for all people. Where ever my journey leads me that’s where I’m going.  I don’t care about making speeches and being seen.

We need 12 men and women from district 52 that keep their ear to the streets and care about the well being of ALL residents in Compton, North Long Beach, Paramount, Rancho Dominguez, South Los Angeles, Watts, and Willowbrook. My motives and intentions qualify me. My desire to see the communities in my district revitalized and thriving qualify me. My willingness to fight for what is right and in the best interest of the people in my district qualifies me. My desire to make a difference and to be a difference qualifies me. My commitment to being the change that I wish to see in this world qualifies me. My dedication to growth and my “Lets Grow!” mantra qualifies me. My unique Internet marketing expertise and skill set qualifies me. Last but not least my voter registration qualifies me.

The truth of the matter is just about anybody can qualify but who do trust to make decisions that will ultimately affect what happens in and around your community?

When a child goes missing we must take action quickly. My friend Alah just shared the news that her cousin is missing and asks that everyone particularily in the Bay area be on the look out for this young lady. Karche Lindsey is a 15 year old girl, 5’3 in height, and 130lbs. She was last seen on Tuesday April 13th 2010 at the Colisuem Bart Station around 3:30pm. See the picture below.

We are praying for her safe return home. If you see her or have any information regarding her whereabouts please contact the Police immediately.

Got word last night…Good news, she is home SAFE.

For the past few days there have been trailers cars and people working day and night at a school near my house. My parents, aunts, uncles, cousins, my big sister attended that school. My niece goes there now. For as long as I can remember and even looking at pictures from when my mom was a student there…the school has pretty much always looked the same.

The name of the school is Enterprise but one of it’s infamous nick names was EnterPRISON for a number of reasons. I’m happy to report that nickname should be no more…Something good is happening in my hood and it may not seem like much to some, but around here it means a lot! I’m looking forward to MORE!

It’s important that kids can take pride in their school and in their community. What we see in our community every day affects how we feel about our community and how we interact. I am proud of the leaps and bounds being made in Compton and of course I’m looking forward to MORE!

We really are birthing a new Compton!

Two people from my neighborhood were killed last night while watching a ball game at Custom City Auto Sales and Accessories in Compton. Our families have close ties. I’m at a loss for words… I didn’t know all of the victims, but one in particular I have many memories of… most of us around here called him by his nick name, Bird. The house where I live…many years ago (when I was a kid) was like the neighborhood hang out and he was one of the many people that would be here. To hear that he was killed is just heart breaking and sad. My deepest condolences and prayers.

It is my hope and prayer that the violence in Compton will cease. It is my hope and prayer that the entire Compton community will heal, rise above, and show LOVE for one another. STOP THE VIOLENCE!
